instead of boiling all day - just use a pressure cooker - 25-30 min. let it cool down by it'self. Add more salt than normally. Been making them this way for more yrs.. I'm 60 now. Try them

I love boiled peanuts! I usually start eating them in the car straight from the stand and make a big mess! I can't wait to try these at home!

Oh my I have never heard of these! Do you shell the peanuts or leave them in the shell. This really looks interesting.

Have you ever tried adding bacon as they cook? It's actually quite good, my husband loves them.

My mother was from SC. When we traveled from NC to visit relatives in SC we always stopped along the road to buy "salty-palties" from young black children who cooked them in open iron kettles over wood fires. Ten cents per brown paper bag about the size of a quart(gives a bit diffferent meaning to the term "dime bag", I'd say LOL).

Today I cook them outdoors using a propane turkey fryer setup. I've found that if I "cycle" the prenuts from 10 minutes of hard boiling back to room temp. it will hydrate them faster. I cycle them sometimes three or four cycles and then finish them off with several more hours of brisk boiling. Of course you must add water, especially after the first cycle. I use only water and sea salt to taste and just boil them until a sampling pleases me.

My wife, an East Tennesseean, loves them as much as do I. Bioled penauts ("salty-palties) is an old southern tradition and you usually either love them or hate them.

barngoddess, that sounds like an interesting alternative. My DH's great grandmother's secret was sugar added with the salt.

My husband uses 4 lbs of peanuts (raw) to a full cup of course sea salt and one Tsbp. of Bay Seasoning. He cooks them 10-12 hours, but likes them real squishy. You must add water, but never add more salt. He covers his but makes them outside in a stock pot on a propane burner. I' going to let him know about your way too. It seems easier!!
