How to make it

  • In one fry pan melt butter
  • place onions and cook until transparent
  • add hash and keep heat on low and keep warm
  • ----
  • in very large pan fry bacon til crisp and drain on paper towels
  • when cool break into small pieces and place in pan with hash
  • wipe pan well with paper towels when cool
  • -----
  • beat egg whites in bowl well but not frothy
  • 3 pats of butter in bacon pan
  • slide whites in
  • turn using 2 spatulas
  • =====
  • ok here we go:
  • when done but not rubbery
  • carefully slide off onto platter
  • you are going to fold over (like a crepe) so guage where the center is
  • with a med scoop or gravy spoon
  • place four scoops one at a time close to the imaginary folding line and equally spaced apart
  • fold over top..will make half circle and look like 4 regular over easy eggs
  • put sauce or salsa of your choice sparingly on top of each egg.
  • Serve with a heaping plate of toast, country butter and jams on table
  • with spatula separate down center and serve 2 'egg' mounds each
  • Place poached yoks around each plate

    Sounds very interesting and very good. I might try these out for dinner some time because I am not a morning person and I doubt I could get my eyes open enough to do this dish justice LOL Thanks for the post
