Raspberry Spinach Salad

- 3 tablelspoons canola oil shopping list
- 2 tablespoons raspberry vinegar (recipe to follow) shopping list
- 2 tablespoons raspberry jam shopping list
- 1/8 teaspoon pepper shopping list
- 8 cups torn fresh spinach shopping list
- 2 cups raspberries devided shopping list
- 4 tablespoons slivered toasted almonds devided shopping list
- 1/2 cup thinly sliced onion shopping list
- 3 kiwi peeled and sliced shopping list
- 1 cup seasoned salad croutons shopping list
How to make it
- In a jar with tight fitting lid, combine the oil, vinegar, jam and pepper.
- Shake well.
- In a large bowl combine spinach, 1 cup of raspberries, 2 tablespooons of almonds and onion, toss gently.
- Top with kiwi, crouton and remaining almonds and berries.
- Drizzle with dressing and serve.
- For Raspberry vinegar
- 3 cups fresh raspberries
- 4 cups white wine vinegar
- 1/2 cup sugar (or less)
- Rinse berries and let dry. Place berries in a 6 cup jar. In a large saucepan
- combine the vinegar and sugar. Cook not boil until sugar dissolves. Pour hot vinegar mixture over berries in jar. Seal tightly a let stand at room temp. for 48 hours. Store in cool dark place. Makes 4 cups

I finally got around to this! I bookmarked it when it was posted six years ago! I used store bought raspberry vinegar. I really liked the dressing. I had the salad for dinner and it didn't seem like dinner to me! Not the fault of the salad. I t...more
