Crab And Corn Bisque

- 1 stick butter or 1/2 cup diet butter shopping list
- 1 med. onion, chopped shopping list
- 2 stalks chopped celery shopping list
- 4 green onions, chopped shopping list
- 2 cans chicken broth (fat free) shopping list
- 4 tbs flour shopping list
- 2 bay leaves shopping list
- 1/4 tsp thyme shopping list
- 1 lb. of lump white crabmeat shopping list
- 1 14 oz. can sweet cream style corn shopping list
- 1 14 oz. can whole kernel corn shopping list
- 1 quart of half & half (or fat free) shopping list
- salt, pepper & cajun seasoning to taste shopping list
How to make it
- Melt the butter in a large heavy pot.
- Saute onions, celery, and green onions for 5 mins., DO NOT BROWN
- Sprinkle flour over seasonings and stir for 5 mins.
- Add chicken broth, bay leaves and thyme
- simmer on low fire for 15 mins
- Add crabmeat and corn
- Simmer for 20 mins
- Add heated half & half
- Simmer 15 mins.
- Add salt, pepper and cajun seasoning to taste
- Enjoy!
