How to make it

  • Wash Rice until water runs clear. (Optional) Drain thoroughly.
  • Saute' pasta in butter until medium - dark brown but not burnt. Add rice and salt. Stir constantly until rice is well coated with butter and begins to turn translucent.
  • Add hot water, bring to a boil, and boil for 2 mins. Reduce heat to low, cover simmer 15 mins. Remove from heat, leave covered an additional 5 mins.
  • To serve as a stand alone side dish. Top with Sauteed pine nuts or almonds in brown butter.
  • Variation. To serve with chicken, add a pinch of saffron or 2-3 anatto seeds when frying the pasta to add a delicate orangish yellow color.

    I love this rice with the orzo - so simple, but unbeatable flavor. I never would have thought that was all there was to it. Obviously the browning in the clarified butter really kicks up the taste. I can't wait to try this at home, since I've loved it for so long in the restaurants I go to!

    Sounds like a great improvement over plain rice. I will make it.
    I enjoy Minnesota wild rice mixed into rice dishes such as chicken rice soup, and so on.

    I forgot to put the saffron in while it was cooking so I sprinkled on some turmeric at the end to yellow it up some. You can see a picture of the rice plated along with some baked stuffed eggplant and zucchini on your baked stuffed eggplant recipe page.
