Lemon Linguine Recipe

Ingredients

8 oz. linguine

1 tbls. olive oil

2 tbls. parsley, chopped

1 tsp. grated lemon peel

1/2 tsp pepper

3/4 cup chicken stock or broth

2 tbls. lemon juice

2 tsp. cornstarch

2 tbls. parmesan cheese, grated

Directions

Cook linguine according to package directions

Drain well and put in large bowl

Add oil, parsley, lemon peel and pepper

Toss to coat

In a saucepan, combine chicken stock, lemon juice, and cornstarch and whisk to dissolve cornstarch

Bring to a boil, whisking constantly

Reduce heat and simmer until thick, about 2 minutes

Add pasta to sauce and toss to heat through

Transfer back to bowl

Sprinkle with parmesan
