Lemon Linguine

- 8 oz. linguine shopping list
- 1 tbls. olive oil shopping list
- 2 tbls. parsley, chopped shopping list
- 1 tsp. grated lemon peel shopping list
- 1/2 tsp pepper shopping list
- 3/4 cup chicken stock or broth shopping list
- 2 tbls. lemon juice shopping list
- 2 tsp. cornstarch shopping list
- 2 tbls. parmesan cheese, grated shopping list
How to make it
- Cook linguine according to package directions
- Drain well and put in large bowl
- Add oil, parsley, lemon peel and pepper
- Toss to coat
- In a saucepan, combine chicken stock, lemon juice, and cornstarch and whisk to dissolve cornstarch
- Bring to a boil, whisking constantly
- Reduce heat and simmer until thick, about 2 minutes
- Add pasta to sauce and toss to heat through
- Transfer back to bowl
- Sprinkle with parmesan
