How to make it

  • Fry in extra virgin olive oil a mixture of garlic clove, butter and bacon.
  • Join minced onion and make it just blond.
  • Add peas, cook it for ten minutes and therefore join the rice, mixing careful.
  • Cover with abundant consommé (made with assorted vegetables) and let it evaporate mixing often.
  • When rice is cooked add butter and Italian Parmesan cheese.
  • Finish the dish with minced parsley.

    300 grams of rice is about 1 and 1/4 cup. 1 kilogram of peas is about 2lbs 4 ounces.

    will be trying, love risotto. this recipe sounds fresh and easy. will be trying over the week-end with some other rice dishes....it's good to have variations when you have lots of people staying. i have tried something very similiar, and made double the recipe. the next day i made rice-patties w/the left-overs and fried in olive-oil.These patties i left out and when i came back, all gone. greatway to use the left-over risotto, or like i said,double this recipe. thanks for jogging my mind with this fab recipe..
