Ingredients

2 cups flaked coconut

1 quart vanilla or cinnamon flavored ice cream

Directions

place coconut in a shallow dish. use an ice cream scoop and a large melon baller to create ice cream balls of varying sizes. roll ice cream balls in coconut, pressing firmly, until coated. place coated ice cream balls on a cookie sheet. return ice cream to freezer for 1 to 2 hours until firm.

in a serving bowl arrange ice cream balls to resemble a mountain and serve,

garnish with few flakes of coconut in dish.
