Spinach Salad With Warm Bacon-onion Dressing And Feta Cheese

Found a recipe online years ago for spinach salad with a warm, bacon-onion dressing...it was too plain for me, so I added tomatoes, mushrooms, olives, bacon, and crumbled blue or feta cheese. MMMM good!
Ingredients
- 4 cups (about 1/3 pound) torn young spinach leaves shopping list
- 2 cups coarsely shredded lettuce shopping list
- 6 slices bacon, fried crisp and crumbled shopping list
- 1 c grape tomatoes shopping list
- 1/2 tub sliced fresh mushrooms shopping list
- 1/2 c ripe or kalamata olives, drained shopping list
- 3 hard-boiled eggs shopping list
- salt and pepper to taste shopping list
- 3 tbsp. bacon drippings shopping list
- 6 tbsp. wine vinegar shopping list
- 2 tsp. sugar shopping list
- 1 tsp. grated onion shopping list
- 1 purple onion, thinly sliced and separated into rings. shopping list
- feta cheese or blue cheese to crumble on top shopping list
How to make it
- Combine spinach, lettuce and bacon.
- Chop eggs and add to salad
- Add mushrooms, olives and tomatoes
- Sprinkle salad with salt and pepper and chill until ready to serve.
- At serving time, heat bacon drippings, vinegar, sugar and grated onion together.
- Add onion rings
- Toss hot dressing with salad
- Top with crumbled feta or blue cheese

Oh this does sound yummy. I love warm or hot dressings over my salad and wlted spinach with bacon makes one of my very favourites of all.
