I make some similar but with peanut butter. Use one sleeve of Ritz - spread peanut butter (creamy or chunky) in between. I use one small box of Andes candies (melt for about 1 1/2 minutes). Coat each Ritz sandwich in chocolate and place on a plate covered with foil or wax paper and freeze until set. I never thought I would like peanut butter and mint together but it is fantastic!
