Ingredients
  • 7 - 10 medium sized dried Chipotle Chiles (stemmed and slit lengthwise)
  • 3/4 cup Onion cut into 1/2 inch Slices (1 medium Onion)
  • 5 Tbls Cider Vinegar
  • 2 cloves Garlic sliced
  • 4 Tbls Ketchup
  • 3 cups water

Directions
  1. Combine all ingredients in a saucepan, cover and cook over very low heat for 1 - 1 1/2 hrs. until the chiles are very soft and the liquid has reduced to 1 cup.
  2. Remove a few of the Chiles from the sauce with a slotted spoon, purree the remaining Chiles and sauce in a blender. Add the reserved Chiles back to the sauce. Keep chilled in the refrigerator for several weeks.

Now if you want a funny.... Went to the supermarket.. They have all these peppers there,bulk, so I had to smell to find the smoked ones.. BUT I did! Wonderful...


I love using dried hot peppers for their robust flavor and this recipe prove my point.

Well Jim baby, I made these again and used 20, yes 20, dried chipotles for a double batch. ;-)~~ I cannot tell y'all how delicious this homemade version is and how delightful your house smells when cooking them down. Try it - you'll be amazed.

Gives me an idea Jim since I have so may peppers and a case of home made catchup I could cook up a huge batch of this and can them.


I always bought my chipotle peppers in adobo in a can! Now I have a home-made recipe, that sounds super easy, too! Thanks! These are great for making Mole sauces.


I am making this again to add that special smokey richness from the aged dried peppers to use for a great burger recipe with caramelized onions and Gorgonzola.
