Mexican Coleslaw

Had this at a luncheon and everyone raved about it and asked for the recipe! Can put it together ahead of time except for the dressing and corn chips.
Ingredients
- 1 package coleslaw (regular size containing cabbage and carrots) shopping list
- 3/4 cup red onion, chopped shopping list
- 3/4 cup cheddar cheese, shredded shopping list
- 1/2 cup cilantro, chopped shopping list
- 1 can (11 oz) mexicorn, drained shopping list
- 1 can (15 oz) black beans, rinsed and drained shopping list
- 3/4 cup plain Doritos, crushed shopping list
- For Dressing: shopping list
- 3/4 cup ranch dressing shopping list
- 2 T fresh lime juice shopping list
- 1 1/2 tsp ground cumin shopping list
How to make it
- Toss all ingredients together in a serving bowl except for the dressing and the Doritos. Add them just a few hours before serving.
