Ingredients

1 package coleslaw (regular size containing cabbage and carrots)

3/4 cup red onion, chopped

3/4 cup cheddar cheese, shredded

1/2 cup cilantro, chopped

1 can (11 oz) Mexicorn, drained

1 can (15 oz) black beans, rinsed and drained

3/4 cup plain Doritos, crushed

For Dressing:

3/4 cup ranch dressing

2 T fresh lime juice

1 1/2 tsp ground cumin

Directions

Toss all ingredients together in a serving bowl except for the dressing and the Doritos. Add them just a few hours before serving.
