....A beautiful way to display a practical salad.... I found this in my 1981 Joys of Jell-o Gelatin. It's great for picnics and family gatherings.

Ingredients
  • 1 - 3 oz. pkg. Jell-O gelatin, lemon flavor
  • 1/2 tsp. salt
  • 1 c. boiling water
  • 1/2 c. cold water
  • 1 tbsp. vinegar
  • (Note: This is only half the amount of vinegar of what the original recipe calls for. My family is not big on the vinegar taste. I may even add a tbsp. of sugar in my next batch. You may want to add this cautiously, to your taste.)
  • _______________________
  • 1/2 c. mayonnaise
  • 1/2 c. sour cream
  • 1 tbsp. prepared mustard
  • 1 tsp. grated onion
  • _______________________
  • 3 c. shredded cabbage
  • 2 tbsp. diced pimiento
  • 1 tbsp. chopped parsley

Directions
  1. Dissolve gelatin and salt in boiling water.
  2. Add cold water and vinegar.
  3. Stir in mayonaise, sour cream, mustard and onion, blending thoroughly.
  4. Chill until thickened.
  5. Fold in cabbage, pimiento, and parsley.
  6. Pour into 4-cup mold or serving bowl.
  7. Chill until firm, about 3 hours.
  8. Unmold.

Wow, I really like the sound of this! I am a vinegar fan and I like the more sour and savory slaws. I've been on a huge coleslaw kick lately too. I remember my mom making molded salads all the time (60s and 70s) and I never do. Might have to bring it back! :) What's old is new right?
