I didn't get a chance to visit the peabody when i was in memphis, but i hear lots of good things about the food there. i will defo try this out. quick question - i don't have a muffin pan, could i make it into more of a cake-y substance if i just put it in a cake or a bread pan? of course i could just go out and get a muffin pan... :)

These are wonderful! I manage to stop by The Peabody at least once a week, and thanks to my work, I am allowed to visit the kitchen. It's always a treat when I'm able to sneak a vanilla muffin, fresh and hot from the oven. These are a definite must-have for anyone who has the pleasure of staying at the hotel, or visiting the on-site bakery!

Am going to give this one a try for sure, how freezeing, i live alone so when i bake i don't want end up troughing them out because of hanging around to long. Hope they do freeze good.

The march of the Ducks! We lived in Memphis for my 1st 6 yrs of life, two miles from Graceland! My Mother had her hair "done" every week with Elvis' Mom. We would go to the Peabody to watch the march! Thanks for the recipe and the flashback!
