Ingredients
  • 8 ounces vermicelli
  • 1 egg, lightly beaten
  • 1/2 cup milk
  • 1 (14-ounce) jar spaghetti sauce
  • 4 ounces sliced pepperoni
  • 2 cups grated mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • ***Kicked-Up Version***
  • Saute chopped onion, mushrooms and garlic in butter and olive oil, drain and stir into sauce, along with 2 T Italian Seasoning; and add sauce as below

Directions
  1. Cook pasta according to package directions, drain and place in a large mixing bowl.
  2. In a small bowl, combine egg and milk.
  3. Pour over pasta and mix well.
  4. Coat a 9-by-13-inch pan with non-stick vegetable spray.
  5. Pour pasta mixture into pan.
  6. Cover pasta with spaghetti sauce.
  7. Layer pepperoni over sauce and top with mozzarella and Parmesan cheeses.
  8. Bake in a preheated 350-degree oven for 25-30 minutes or until golden brown.
  9. Remove from oven and cool on wire rack for 10 minutes.
  10. Cut into squares to serve.

Turning spaghetti into casserole is brilliant! the eggs pump up the protein content and stretches ingredients and the kids love it! We make this with ground beef or bacon too!
