Ingredients

How to make it

  • Saute the onion in 2 tbsp of the water until translucent.
  • Add mushrooms and remaining water, cook 7-8 minutes, stirring constantly.
  • Sprinkle in flour and stir in well.
  • Slowly add the stock and sherry, stirring constantly. Cook 5 minutes longer.
  • Remove from heat and stir in yogurt, salt and pepper just before serving.

    Just made this tonight- I love the yogurt alternative to cream for a bisque!!! I think next time I think I would cut down a little on the pepper, though. We added a minced potato at my husband's request, and a little bit of broccoli (also minced) that we needed to use up and it turned out good. (Boiled the potatoes aside in broth before adding). I personally didn't care for the texture of the mushrooms though so I pureed the leftovers, but I haven't tried them yet. Also, subbing chicken broth worked for me- I thought I had veggie on hand but I was wrong!
