Ingredients

How to make it

  • Mix the marinade ingredients together and add the chicken set aside while preparing the other ingredients
  • Heat wok or frying pan, add 3 Tbsp oil, heat till hot add chicken. Cook until color changes. Remove from pan and set aside.
  • Reheat pan and add 1 Tbsp oil. When hot add add th ginger root, cook for a minute or so, then add the bell peppers and cook until color brightens, then add the bamboo shoots. Stir fry for a couple of mintues. Add the onions and stir for a minute or so.
  • Add the sauce ingredients to the pan and the chicken. Cook until chicken cooked through, about 2 minutes. Add the cashews and stir again to mix thoroughly.
  • Serve with Thai perfumed rice.

    Hey Joe,
    What a great sounding chicken recipe! I love chicken anyhow because you can flavor it so many ways and it's way better for you than beef.
    I live in an area of Southern CA that is highly Vietnamese and Korean so I'm sure I can find the things for this dish, no sweat.

    Yellow bean sauce is fermented yellow soybeans. It has a rich salty-sweet flavor. You can get it in Asian shops and some large grocery stores. It gives a wonderful flavor to food. Thank you for your comment! There is no substitute for it unfortunateyl. However, another sauce possibility would be 3 Tbsp light soy sauce and 1 Tbsp sugar with the sesame oil as above. The flavor is very different, but GOOD!
