Ingredients
  • 8 oz. spaghetti
  • 1/2 lb. hamburg or 2 Italian sausage, casing removed
  • 1 small onion, chopped
  • 1 box(10 oz.) frozen chopped spinach, thawed
  • 2 large eggs, beaten
  • 1 jar spaghetti sauce, divided
  • 1 cup grated Parmesan cheese, divided
  • 1/2 cup ricotta cheese (I have used cottage cheese in a pinch)
  • 1/4 tsp. nutmeg

Directions
  1. Preheat oven to 350
  2. Lightly grease 9 in. square pan
  3. Cook spaghetti according to package directions, drain
  4. In pan, cook onion until tender and brown meat
  5. In large bowl, mix together eggs, spaghetti, 1/2 cup spaghetti sauce, meat mixture, and 3/4 cup Parmesan cheese
  6. Pour into baking pan
  7. Squeeze excess water out of spinach
  8. In bowl, mix spinach, cheese, and nutmeg
  9. Spoon over spaghetti mixture
  10. Spread with remaining spaghetti sauce
  11. Bake for 30 minutes
  12. Sprinkle with remaining Parmesan cheese and bake 5 more minutes
  13. Let stand 5 minutes before serving

I finally made this last week, and it was REALLY good. It's spaghetti lasagna, what's not to love?! And I'm going to use nutmeg in my next lasagna - what a great, subtle little addition! It was too spinach-y for the kids, though, next time I'll either halve the spinach, or use broccoli instead.


I'm in love with this recipe...can't wait to give it a whirl....and nutmeg and spinach are a match made in heaven. Great job.


I don't remember seeing this one before. I have one box of spinach left and everything else...gonna give it a try soon...printing out now.

Yeah baby, I've made this with shells, fusilli (sp?) you name it. But I've never added spinach - hmmm.... sounds good, kinda like lasagna. Good one, Wynne.

Well, apparently I saw this when you posted it...I emailed it to my recipe specific email this time, so I don't forget! lol


OK...Fatman had 2 BIG helpings...his buddy said, "it's the kind of thing you want to eat till you pop, you just can't make enough of that." I think he's working me for a helping to take home. lol

I did almost forget the cottage cheese (had no Ricotta) but I was determined to get it in there. I scooped the sauce out of the way and mixed it in with the spinach very carefully. I hope you like the pic!
