Luscious Country Humming Bird Hummingbird Cake

- Humming Bird cake Recipe shopping list
- 3 cups flour shopping list
- 2 cups sugar shopping list
- 1 tsp cinnamon shopping list
- 1 tsp soda shopping list
- 1 cup vegetable oil shopping list
- 3 ripe bananas ~ diced shopping list
- 1 ~ 8 oz. can crushed pineapple, drained shopping list
- 3 eggs (beat first) shopping list
- 1 cup pecans, chopped shopping list
- 1tsp vanilla shopping list

- For The cream cheese glaze shopping list
- 8 ounces cream cheese shopping list
- 3 tablespoon soft butter shopping list
- 1 tablespoon lemon juice shopping list
- 1/2 teaspoon vanilla shopping list
- 1 tablespoon each, lemon and orange zest - finely minced shopping list
- 1 1/2 cups sifted confectioner's sugar shopping list
- Chopped nuts for garnish (if desired). shopping list
How to make it
- Beat the eggs in a small bowl before adding.
- In a medium bowl, mix first four ingredients together very well. Add oil, bananas, pineapple, pecans, vanilla and eggs.
- Mix by hand for 2 or 3 minutes. The batter will not be smooth.
- Pour batter into a well greased bundt pan, or sprayed with non stick cooking spray. (I use my pound cake pan).
- Bake at 350° for 1 hour and 15 minutes.
- Check doneness by inserting a tooth pick in the top of cake, if the tooth pick comes out clean, the cake is done.
- Cool, remove from pan.

- To make the glaze/ frosting:
- Glaze: soften cream cheese and cream with butter. Stir in lemon juice, vanilla and citrus zest.
- Fold in confectioner's sugar to make a soft, drippy glaze.
- Drizzle over cooled cake. Allow to set. Recover excess and glaze again.
- Use additional nuts as desired on top. (optional)
