How to make it

  • Beat the eggs in a small bowl before adding.
  • In a medium bowl, mix first four ingredients together very well. Add oil, bananas, pineapple, pecans, vanilla and eggs.
  • Mix by hand for 2 or 3 minutes. The batter will not be smooth.
  • Pour batter into a well greased bundt pan, or sprayed with non stick cooking spray. (I use my pound cake pan).
  • Bake at 350° for 1 hour and 15 minutes.
  • Check doneness by inserting a tooth pick in the top of cake, if the tooth pick comes out clean, the cake is done.
  • Cool, remove from pan.

  • To make the glaze/ frosting:
  • Glaze: soften cream cheese and cream with butter. Stir in lemon juice, vanilla and citrus zest.
  • Fold in confectioner's sugar to make a soft, drippy glaze.
  • Drizzle over cooled cake. Allow to set. Recover excess and glaze again.
  • Use additional nuts as desired on top. (optional)

    I love, LOVE hummingbird cake! So does my family! I used to work at a bakery making wedding cakes, and I always brought home the cake trimmings for my girls. Anytime I brought home hummingbird cake, my girls would go for it even before the chocolate!
    Surprisingly, I've never made it at home, so now...with your recipe...I will!
