Ingredients
  • Classic crepe recipe:
  • 2 cups flour
  • 4 eggs
  • dash salt
  • 1 tsp vanilla extract
  • 2 tsp sugar
  • flour - pour until you reach the consistency of buttermilk
  • /////
  • 1. Classic Fillings:
  • Nutella
  • Cajeta (see Magali's awesome recipe)
  • jam, fruit of flower preserves
  • /////
  • 2.Filling with cheese:
  • 1 cup shredded cheese -I prefer to use mozzarella - although you can use anything you like
  • Pepper
  • 1 thinly sliced tomato
  • 1 clove garlic
  • //////
  • 3.Filling with cheese and ham:
  • Same as above plus ham - you can substitute ham with bacon
  • /////
  • 4.Filling with cheese and mushrooms:
  • Same as the one with cheese + mushrooms
  • /////
  • 5.Filing with Spinach and Feta Cheese:
  • 150g Feta Cheese
  • 100 g Cottage Cheese
  • 1 egg
  • 1/2 package frozen spinach cooked with salt, shallots and olive oil
  • salt and pepper
  • 2 tbsp parsley
  • /////
  • 6. Filling with smoked salmon:
  • 100 g cream cheese
  • 2 tbsp dill
  • 1 tbsp chives
  • 200 g thinly sliced smoked salmon
  • ////
  • 7. Filling with sour cream and caviar:
  • 100g sour cream
  • 3 tbsp chopped dill
  • 1 -2 tablespoons caviar
  • /////
  • 8.Filling with Ice Cream and Creamy liquors:
  • Anything goes here - any Ice Cream you like and any liquor from Bailey to Rum.... endless mixes
  • /////
  • 9.Filling with walnuts:
  • 150 g walnuts
  • 2 tbsp breadcrumbs
  • 2 tbsp butter
  • 3 spoons sugar
  • 1 spoon vanilla extract or great walnut liquor (Nuss-schnaps)

  • 10. Pizza crepe:
  • 150g sausage - I use chorizo - love it a little spicy
  • 150 g shredded cheese
  • 4 tbsp of your fave pizza sauce
  • 1/2 tsp oregano
  • /////
  • 11. Crepes flambe:
  • Filling:
  • 3 tbsp sour cream
  • 3 tbsp cottage cheese
  • dash of rum
  • 3 tbsp sugar
  • 1 tbsp raisins
  • Fill them up with the above and pour rum and sugar on top - set it on fire
  • /////
  • 12. Plantain/banana rum filling:
  • 3 large plantains
  • 2 tbsp sugar
  • 1 oz rum
  • //////
  • 13. Apple cinnamon filling:
  • 3 apples cored and thinly sliced
  • 3 tbsp sugar
  • 1/2 lemon juice
  • verbena( I love to add some herbs to my sweet mixes!)
  • 1tsp cinnamon
  • //////
  • 14. Raspberry -vodka filling:
  • 1/2 cup raspberries
  • 1 tbsp sugar
  • 1 spoon vodka ( gives a crisp taste)
  • //////
  • 15. Strawberry vanilla filling:
  • similar to raspberry vodka, replace raspberries with strawberries and vodka with 1/2 spoon vanilla extract

Directions
  1. Ok, I went crazy with this, however possibilities are endless.
  2. Crepe mix:
  3. Everybody knows how to make them - same as pancakes, but thinner. Just a few tips: use the same pan for and only for crepes ( the taste of crepes will get better). Leave the mix 1 hour to settle before cooking it ( you may find that you need to add more milk as it gets thicker) and if you make crepes with a salty filling skip the sugar and the vanilla.
  4. Some of the fillings are pretty obvious - just fill them up!
  5. The ones that you have to cook the filling in the pan are the following:
  6. 9, 12, 13, 14,15.
  7. The following, mix and leave it in the oven at 350F for about 20-30 min ( you can roll them up and top them, or you can simply add 1 crepe and 2 tbsp fillings on top of each other, like a cake):
  8. 2, 3,4, 5, 11
  9. The rest , just mix and fill.
  10. Bon appetit!

Elga, this is PHENOMENAL...thank you so much for going to all of this work! I have never considered crepes as my strong point - always have problems cooking them. Perhaps I need to invest in a crepe pan and see if that helps. With your inspirational recipe post, I think I can tackle this - your pictures are mouth-watering!! I love making crepes for the family but I never seem to make enough ;) These are wonderful fillings and thanks so much for sharing them with all of us. A favourite filling in our family is warmed cherries and Vodka with a dollop of either sour cream or freshly whipped cream on top. Mmmmmmmm, so good!
