This is a recipe I created using homemade cheese flavored polenta, sauteed chicken cutlets and my favorite marinara sauce from a member named Mykidsmom.

Ingredients
  • Cheese flavored polenta - cut into 1/4" thick slices
  • 3 Chicken cutlets - cubed and sauteed in olive oil, garlic, onion , salt and pepper.
  • 1 1/2 cups shredded Italian blend cheese
  • 1/2 cup fresh grated parmesan cheese
  • Mykidsmom's Sauce Recipe:
  • 2 tbls. olive oil
  • 4 shallots - minced
  • 2 cloves garlic - minced
  • 28oz. can Italian Plum Tomatoes
  • 1 tsp. sugar
  • 8 fresh basil leaves - shredded
  • salt + pepper to taste
  • Heat oil in a saucepan. Add shallots and cook for 5 minutes. Add garlic and cook for 1 minute. Add tomatoes, juice and all. Break them up and stir well. Add sugar, salt and pepper. Bring to a boil. Reduce heat and simmer for 10 minutes or til thickened. Stir in basil. Taste and adjust seasoning if needed.

Directions
  1. Assemble Recipe:
  2. Grease a 9 x 13" baking dish. Put a layer of sliced polenta covering the entire bottom of baking dish. Sprinkle with half the Italian blend shredded cheese. Add half the sauteed chicken on top. Then add half the marinara sauce. Repeat layers one more time.
  3. Top with fresh grated parmesan cheese.
  4. Bake uncovered at 350 degrees for about 25 minutes or til cheese is browned.
  5. Remove from oven and let it set for about 15 minutes, before cutting and serving.

This is wonderful - I flagged your photo as gorgeous and added a comment there as well! One quick question for ya... when you say cutlets, did you previously bread and fry them? Or are they unbreaded...just asking, I want to get the recipe perfect... I love this and her sauce looks super as well...you did a wonderful job here Lillian! Got my five forks for sure! And saving this one to try as well - hopefully next week or over the weekend.

This was kind of like lasagna with the layering. It was very easy to make and swallow. :-) -- in other words: it was good! The polenta was a refreshing change from pasta even though I didn't make my own. Next time I’m going to try the polenta with green chilies. Thanks for posting this recipe! --

OK, Lillian, this is what I made last night! Let me tell you, D-E-E-E-ELICIOUS! This is kind of like a polenta lasagna. I made my own polenta, that's the only thing I changed. Even my kids ate it! They said it was actually pretty good! I don't get compliments from them too often! I did add 2 pictures. Since you already had a pic that showed a side view, I took one from the top. Will definitely be making this for years to come, thanks!
