Fall is here, so I am eager to share this recipe from my friend Dawn with you all. This is a wonderful seasonal cookie, so unique, but oh so good. Try these and you will also be a fan!

Ingredients
  • 2 Cups Flour
  • 1 1/2 TBS Cinnamon
  • 1 TSP Baking soda
  • 1 Cup Canned Pumpkin
  • 1 Cup Sugar
  • 1/2 Shortening (Yes, use Crisco)
  • 1 Cup Raisins
  • 1 Cup Chopped Nuts (Walnut or Pecan)
  • 1 TSP Vanilla
  • Cream Cheese Frosting: (Optional)
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup sifted confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • Mix all till smooth and creamy!

Directions
  1. Mix the first for ingredients in a seperate bowl, set aside.
  2. Mix the last six ingredients, cutting in the shortening.
  3. Mix half of the dry ingredients, with the wet and mix. Slowly add the rest of the dry ingredients and mix well by hand.
  4. Use a table spoon and put cookies on greased pan.
  5. Bake at 375 for 15 minutes, but check after 10 minutes when using
  6. a dark cookie sheet.
  7. Transfer to wire rack and cool.
  8. Frost with Optional Cream Cheese Frosting!!! YUM Thanks Lura

Marky, These are really yummy looking. I love pumpkin and will have to try these out. Would it be too much to ice them with a cream cheese frosting??? Great post.

I like pumpkin..and Sweet potatoes...Hmmmm this looks like one that would be good to make. I'd like to ice the top of these.


I love pumpkin will make these for our fall aldies luncheon in October it will be just right before Halloween like two or three days before think I may make these next weekend as we are going to a party think these will be just the thing to tke thank you so much for this recipe.

We all get together for the trick-or-treaters on Halloween, make chili, corn bread, etc. These will be THE dessert! Perfect!


Oh, yum! They sound perfectly delicious! I will use parchment to bake them on as I have grown to love it for baking cookies - they just come off so easily after cooling a bit!
