THIS LATIN -STYLE PEPPER AND GARLIC SAUCE COMBINES HOT AND SWEET PEPPERS ...ITS GREAT FLAVOR SEEMS TO GO WELL WITH EVERYTHING MEAT FISH CHICKEN , AS WELL AS SALADS AND VEGGIES AND OTHER DISHES.........

Ingredients
  • 2 - red peppers seeded and quartered
  • 1- green pepper seeded and quartered
  • 3 scotch bonnet peppers, seeded
  • 1- bulb ( whole head ) of garlic , separated into cloves
  • 2 - sprigs , fresh coriander chopped
  • juice of one lime
  • 1/4 - cup malt vinegar
  • 1 - teaspoon salt-1 - tablespoon freshly ground black pepper
  • 1/2 - cup olive oil

Directions
  1. puree the red peppers, green pepper, scotch bonnet,\ peppers, garlic, coriander, and lime juice in a food processor.
  2. add the vinegar, salt, and black pepper, and olive oil and process again.
  3. bottle the sauce in hot sterlized jars unless you will be using it all
  4. yields 3- cups
