Came across this wonderful Chili during my travels in the Midwest. This coveted recipe has won many awards, and it is a true winner. Don't let all the spices scare you, one of the best chilis I have have ever had..........A keeper.

Ingredients
  • 3 Tbs Olive Oil
  • 1 1/2 Lb Boneless Chicken Breast or Thighs, sliced.
  • 1 1/2 Cups Yellow Onions, chopped
  • 1/2 tsp Red Chili Flakes
  • 1 Tbs Fresh Minced Garlic
  • 2 Tsp minced fresh Jalepeno peppers
  • 1 1/2 Cups Chicken Stock
  • 3 Tbs Chili Powder
  • 1 Can (28 Oz) Whole Tomatoes, undrained and broken up
  • 1 Can (29Oz) Tomato Puree
  • 2 Cans (15 Oz) Dark red Kidney beans, drained
  • 1 Can (15Oz) Hominy
  • 1/3 Cup Fresh Cilantro, chopped
  • 2 Tbs Fresh squeezed Lime Juice

Directions
  1. Heat Olive oil in a large stockpot. Saute' chicken until cooked.(about 8 minutes) Add onions and reduce heat. Cook for additional 3 minutes, until onions are tender.
  2. Add the rest of the remaining ingredients (Except the cilantro and lime juice) and simmer, very low for 30 minutes.
  3. Add the lime juice and cilantro just prior to serving, stir a few times.
  4. Top with Sour Cream, Cheddar and tortilla chips. Also a few chunks of fresh pineapple for garnish. Delish.

As I personally do not eat anything "ground" I am always looking for chili's with whole meats. This sounds outstanding. It is about 40 degrees outside this morn.
