Ingredients

How to make it

  • Heat Olive oil in a large stockpot. Saute' chicken until cooked.(about 8 minutes) Add onions and reduce heat. Cook for additional 3 minutes, until onions are tender.
  • Add the rest of the remaining ingredients (Except the cilantro and lime juice) and simmer, very low for 30 minutes.
  • Add the lime juice and cilantro just prior to serving, stir a few times.
  • Top with Sour Cream, Cheddar and tortilla chips. Also a few chunks of fresh pineapple for garnish. Delish.

    I also added a can of white beans for one of the red ones . And for the chili powder, added 1 Tbs each of different kinds of chili powder plus 1 Tbs salt too
    It was excellent
    Next time I may sub the chicken broth with beer as I like that flavor also
    So thanks for the super recipe!

    I served this exactly as you did. Sour cream. cheddar and crushed tortilla chips. This is the #1 chicken chili recipe and the one I have been searching for. I thank you~~~~~~~~~~~Sas

    As I personally do not eat anything "ground" I am always looking for chili's with whole meats. This sounds outstanding. It is about 40 degrees outside this morn.
