My mama is right...this sounds right up my alley! I've been digging tomatoes and feta all spring. I usually throw in some kalamata olives too...wonder if I could dice a few of those up and add it to this? If I try it, I'll be sure to let you know!

Zena, I made these last weekend when we had company - GREAT success! I had to post a picture...besides being delish, they were colorful and pretty, too. I didn't have any bread crumbs, so I crushed up some garlic croutons - this one's a keeper for sure, and one that we will use every "fresh tomato season"!

Great Recipe! I always used parmesan cheese but the feta has a more flavorful sound to it. It is on the must try list!
