Any variety of feta cheese can be used in these Greek Tomatoes... These are simple but elegant.

Ingredients
  • 3 small plum tomatoes, cut in half.
  • 1 tablespoon dry breadcrumbs
  • 2 tablespoons crumbled feta cheese with basil and tomato
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon pepper

Directions
  1. Preheat toaster oven to 350 degrees
  2. Place tomato halves on toaster oven pan coated with cooking spray; cut side up
  3. Sprinkle breadcrumbs over each tomato half, and top with cheese.
  4. Sprinkle with oregano and pepper.
  5. Bake at 350 degrees for 20 minutes.
  6. Serve warm.
  7. To bake in a conventional oven, place tomato halves on a baking sheet and bake for 25 minutes at 350 degrees.
  8. These will look like little stuffed tomatoes.

My mama is right...this sounds right up my alley! I've been digging tomatoes and feta all spring. I usually throw in some kalamata olives too...wonder if I could dice a few of those up and add it to this? If I try it, I'll be sure to let you know!


Zena, I made these last weekend when we had company - GREAT success! I had to post a picture...besides being delish, they were colorful and pretty, too. I didn't have any bread crumbs, so I crushed up some garlic croutons - this one's a keeper for sure, and one that we will use every "fresh tomato season"!


Love tomatoes,love feta, and Irishmama's suggestion of Kalamata olives just put it right over the top! Thanks for the great recipe!

Great Recipe! I always used parmesan cheese but the feta has a more flavorful sound to it. It is on the must try list!
