Roasted Pork Tenderloin

- 2 large cloves garlic shopping list
- 1 1/2 tsp. coarse salt shopping list
- 1 tsp. dried sage shopping list
- 1/4 tsp. pepper shopping list
- 1 tbsp. olive oil shopping list
- 2 pork tenderloins, about 1 lb. each shopping list
How to make it
- Position a rack near the bottom of the oven and preheat to 500º F.
- Mince the garlic. In a small bowl, combine garlic, sage, salt, and pepper with the olive oil. Rub all over the meat and place the tenderloins, side by side, but not touching, in the smallest pan that will hold them.
- Roast for 10 minutes, flip over and roast again until the internal temperature reaches 155º F (about 8 minutes more).
- Let rest for about 10 minutes. The internal temperature will reach 160º F while resting. Slice into 1/2" slices.

Excellent flavors! :) I did use want to use fresh sage, so I just pulsed it, the sea salt, and peppercorns in my spice grinder, then mixed that with the olive oil and garlic and continued with the recipe as written. We served this with my Sumac Autu...more
