Okay, it's my turn now to compliment you ;-) I just love you to bits!!! This carrot cake recipe is perfect. I've been trying to reduce sugar in my baking and as you said, with the natural sweeteners in pineapple and carrots who needs more! The other bonus is NO COCONUT!!! I'm in heaven. I am so highly allergic to coconut and often I see coconut as an ingredient in Carrot Cake. THANK YOU!!!

Feel free to substitute any flour you like I choose spelt flour because I like the way it makes my goodies turn out, and the taste is almost nutty to me, there is a lot more to learn if you would like to look it up sometimes also it can be found at health food stores and also in the health food isle and bulk sections of your large grocery stores. I buy Bob redmill 100% stone ground spelt flour.

I tried it and loved it. All of my co - workers also wanted the recipe so I shared. I doubled it and baked in a 9x13 glass pan, which worked well. I really had fun making this, eating and sharing. Thanks!
