Slow Cook Savory Stuffed Chicken Breast

- 6 boneless, skinless chicken breasts shopping list
- 3 C chopped fresh spinach shopping list
- 8 oz. feta cheese, crumbled shopping list
- 1/3 C oil packed sun dried tomatoes, drained and chopped shopping list
- 1 tsp minced lemon zest shopping list
- 1 tsp dried basil shopping list
- 1/2 tsp garlic powder shopping list
- Freshly ground black pepper to taste shopping list
- 1 can (15 oz) diced tomatoes with juice shopping list
- 1/2 C pitted oil cured black olives shopping list
- Cooked polenta, if using shopping list
How to make it
- Place chicken breasts between plastic wrap and pound to about 1/4 inch thickness
- Combine spinach, feta, sun dried tomatoes, lemon zest, basil, garlic powder and pepper in a medium bowl
- Place each chicken breast smooth side down on work surface, top the wide end of the chicken breast with some of the spinach mixture, roll up tightly and place seam side down in slow cooker
- Top with diced tomatoes and their juice and the olives
- Cover and cook on High 4 hours of Low 51/2 to 6 hours until chicken is cooked through
- Serve with polenta drizzled with some of the juices
- 295 calories per serving
