Ingredients
  • 6 boneless, skinless chicken breasts
  • 3 C chopped fresh spinach
  • 8 oz. Feta cheese, crumbled
  • 1/3 C oil packed sun dried tomatoes, drained and chopped
  • 1 tsp minced lemon zest
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • Freshly ground black pepper to taste
  • 1 can (15 oz) diced tomatoes with juice
  • 1/2 C pitted oil cured black olives
  • Cooked Polenta, if using

Directions
  1. Place chicken breasts between plastic wrap and pound to about 1/4 inch thickness
  2. Combine spinach, feta, sun dried tomatoes, lemon zest, basil, garlic powder and pepper in a medium bowl
  3. Place each chicken breast smooth side down on work surface, top the wide end of the chicken breast with some of the spinach mixture, roll up tightly and place seam side down in slow cooker
  4. Top with diced tomatoes and their juice and the olives
  5. Cover and cook on High 4 hours of Low 51/2 to 6 hours until chicken is cooked through
  6. Serve with polenta drizzled with some of the juices
  7. 295 calories per serving

OMG!!! This looks and sounds amazing! I love the stuffing ingredients and I love the fact that its made in the slow cooker and I love that its served with polenta and the drippings!


This was AMAZING! This has got to be the best smelling recipe as well as it filled the house up all day with its wonderful aroma! My first time to eat polenta as well! I think it's a fancy word for grits, cause I think they taste the same! LOL! Thanks for the recipe!
