Back to report in on this. I followed the recipe, but omitted the red pepper flakes (didn't have any) and substituted cornbread crumbs. I used two small pieces of cornbread, equalling probably a good 3/4 cup crumbs instead of 1/8th cup as called for. I had Roma tomatoes on hand, and cut them in half lengthwise, removing the pulp leaving the "shells."
The taste is wonderful and the cornbread really added a bit of substance to this. Mozzarella is light enough not to take away from the flavors of the tomatoes/spinach.
I rate this a 5 because of ease in prep, adaptability in using/subbing other ingredients, and originality. MAKE THIS ONE---YOU WON'T BE DISSAPPOINTED!

Yeah, this is delicious. The guys raved about it. So funny to hear them give their 'critiques' lol. One who went on and on a couple weeks ago about not liking cooked tomatoes was the biggest fan! (I knew I would convert him somehow, heehee)
I was only missing the mushrooms and next time I might just have more than a dash of red pepper flakes. There will be a next time!
