This is one of my family's favorite breakfast. There are a lot of ingredients so feel free to take away something that you don't care about...it will still taste great!

Delicious. Made this for the Refugee Recipe Swap...it was perfect for us, for breakfast, as we aren't generally sweet eaters, ever, let alone in the morning. The only change I made was to use a bit of salsa in place of the tomato because I couldn't find any fresh tomatoes I wanted to buy, and ours aren't here, yet! :) I've added a photo..thanks for a very good keeper breakfast recipe! :)

Pssst...you didn't mention the taters you made to go with 'em! :) Sliced thin and seasoned with a lil heat and fried in the bacon/butter...great addition, hon, others might wanna use that! ;)
