This is one of my family's favorite breakfast. There are a lot of ingredients so feel free to take away something that you don't care about...it will still taste great!

Ingredients
  • 4 eggs
  • butter
  • 2 roma tomatoes
  • 1 avacodo, chopped
  • 1/2 bell pepper (green or red), chopped
  • 1/2 yellow onion, chopped
  • 1/4 cup cheddar
  • 1/4 cup monterey jack
  • 1/4 cup mushrooms, roughly chopped
  • 4 slices bacon, chopped
  • cilantro, chopped
  • jalapenos, chopped (optional)
  • salt & pepper
  • tortillas
  • hot sauce (optional)

Directions
  1. Start the bacon in a pan and cook until crispy.
  2. Add butter to large pan and cook onions and bell peppers until soft. Whisk eggs together and add to pan and cook on med low to med. Add tomatoes, avocado, and mushrooms. Cook for a minute or so. Add cheeses, and cook till melted and eggs are done. Add cilantro, salt and pepper and bacon. remove from heat.
  3. Serve with tortillas, sprinkle with jalapenos and hot sauce. Enjoy!

Delicious. Made this for the Refugee Recipe Swap...it was perfect for us, for breakfast, as we aren't generally sweet eaters, ever, let alone in the morning. The only change I made was to use a bit of salsa in place of the tomato because I couldn't find any fresh tomatoes I wanted to buy, and ours aren't here, yet! :) I've added a photo..thanks for a very good keeper breakfast recipe! :)


These were awesome. :) I was craving some sort of Mexi-style breakfast the other day, and was all set to do my standby breakfast scramble, when Keni pointed me towards these... and I'm glad she did. I'll definitely be making these again... and again... and again. ;) Very quick and easy, too... great recipe


Pssst...you didn't mention the taters you made to go with 'em! :) Sliced thin and seasoned with a lil heat and fried in the bacon/butter...great addition, hon, others might wanna use that! ;)
