Chive Potato Souffle

Potatoes are one of my favorite foods and I am always looking for different ways to cook them. This is delicious.
Ingredients
- 2 cups hot potatoes, mashed shopping list
- 3/4 cup sharp cheddar cheese, shredded shopping list
- 1/2 cup sour cream shopping list
- 1/4 cup chives, finely chopped shopping list
- 1/2 tsp. kosher salt shopping list
- 3 eggs, separated shopping list
- chives to garnish shopping list
How to make it
- Preheat oven to 350
- Add potatoes, cheese, sour cream, chives and salt to mixing bowl and combine
- Beat egg yolks and stir into potato mixture
- Beat egg whites with beater until stiff peaks form
- Fold into potato mixture
- Put in 1 1/2 qt. baking dish
- Bake, uncovered for 45 minutes or until knife inserted in center comes out clean
- Sprinkle with chives before serving
