How to make it

  • Boil chicken in water seasoned with salt & onion powder until cooked through.
  • Transfer chicken to large bowl & shred.
  • Add mayo & stir until evenly distributed & chicken is thoroughly coated.
  • Add in lemon juice, honey & buttermilk & stir well.
  • Combine salt, pepper, celery, cherries & almonds.
  • let chill for at least 30 minutes prior to serving.

    Made this today for lunch with some leftover roast chicken that i made for dinner last night...so good!! I did have to make a couple minor changes due to lack of ingredients...I used plain yogurt in place of the buttermilk and used red wine vinegar in place of the lemon juice. Made lettuce wraps with them...yum!! Will post a pic soon :)
