This was my first time using large shells - it's not a complicated or "different" recipe, just good, hearty, and satisfying. Easy too. Hope you enjoy! ;') I say it serves 4, but depending on who's eating it. LOL

Ingredients
  • 1/2 lb. ground beef
  • 1 tsp. minced garlic
  • 1/2 cup chopped onion (optional)
  • 1 can (14.5 oz.) Petite diced tomatoes (or you can use sauce)
  • 1 can (6 oz.) tomato paste (add water to the consistency you like) can eliminate if using sauce
  • 2 tsp. Italian seasoning (or to taste, I don't really measure)
  • 1 tsp. dried oregano ( " )
  • salt and pepper to taste
  • 1 16 oz. carton cottage cheese
  • Spinach - I used frozen-thawed-drained (what I had, about 1/2 cup)
  • Shredded Parmesan cheese - handful (I used about 1/4 cup)
  • 1 tsp. dried basil (again, or to taste)
  • Large pasta shells cooked al dente (I used 10 - fit well in my oval 2.5 qt. dish)
  • 1 cup (or more) shredded mozzarella

Directions
  1. Brown ground beef with onions, garlic - drain fat
  2. Meanwhile prepare shells
  3. Add tomatoes and seasoning to meat - bring to simmer
  4. In bowl mix cottage cheese, spinach, parmesan, and basil (s&p to taste)
  5. When shells are ready, remove and place on waxed paper (or whatever) so they drain and don't stick together till cool to touch
  6. Pour half the meat sauce into casserole dish
  7. Stuff shells with cheese/spinach mixture and place on top of meat sauce
  8. Cover shells with remaining meat sauce and top with mozzarella
  9. Bake at 350 for approximately 40 minutes or until desired bubbliness (yeah, it's a word!)
  10. Let sit a bit before digging in.
  11. Great with a green salad and crusty bread - Enjoy!!!

Wonderful - I love these - I often buy them frozen when in a hurry but the next time I think I will make them and freeze them to have them on hand. I have a FoodSaver and it is the greatest thing for freezing left overs. Your recipes are the greatest and so are the food porn pictures!
