Simplified down to just the stuffed zuchini. My imagination just got the best of me...sorry for the confusion. I do have a picture or 2 of them and will put them up tomorrow.

Ingredients
  • 2 lbs ground buffalo meat
  • 1 cup panko or home-made bread crumbs
  • 8 medium fresh zucchini
  • 1 egg lightly scrambled
  • 1 tsp garam masala
  • finely chopped head of roasted garlic, skin removed and shmushed(?)
  • 1 onion diced very finely
  • fresh parsley leaves medium chopped
  • sea salt
  • white pepper
  • ground chili powder

Directions
  1. wash zucchini well and slice in half without removing the tops or bottoms
  2. With a spoon, scoop out the centers but leave at least 1/4 inch of flesh
  3. Preheat oven to 325F
  4. Fit Baking sheet with quick-release foil and put in oven while it is heating. This will help your meal roast faster.
  5. Place squash shells on a platter.
  6. In a large bowl place meat, crumbs, egg, flesh from zucchini,
  7. garam masala, diced onion, chopped parsley, roasted shmushed garlic, seasonings.
  8. Mix gently with your newly washed hands and place in the shells.
  9. Remove pan from oven (hot!) and place filled stuffed zucchini carefully. Sprinkle with chili powder to your taste.
  10. Roast until sizzling. There will not be a large amount of fat as buffalo is very lean. Serve with a salad of baby greens.
  11. Let's eat!

I see I have confused everyone, including myself, in my attempt at the bison horns; so I will simplify the recipe to just Buffalo Horns. It is complicated and I guess I just could not put my imagaination into words..I apologize

I was privy to the original that you posted: Wow... it sounds complicated, but when you break it down to its individual components, it's not too bad. I had to chuckle at the beets... ;-)

ya get an "A" for ingenuity, a 5 for making me think, and a thumbs up for all the effort you put into typing this dish lol

The filling for the zucchinis sounds intriguing, and I shall have to try it. I hope you don't mind if I skip the lips ;-)

Oh man, I missed the original post. What beets? And why were they confusing? If you have a copy of the original recipe still hanging around, I'd love to see it. (don't re-type it just for me though!)
Btw, love the "schmushed"!!! You sound like my mom. :D

I love the sound of this but will have to see if Buffalo meat is available here. I suppose I could use lean beef or pork if I can't find it though. What do you think? I definately want to try it. Thanks & 5 forks
