Buffalo Horns

- 2 lbs ground buffalo meat shopping list
- 1 cup panko or home-made bread crumbs shopping list
- 8 medium fresh zucchini shopping list
- 1 egg lightly scrambled shopping list
- 1 tsp garam masala shopping list
- finely chopped head of roasted garlic, skin removed and shmushed(?) shopping list
- 1 onion diced very finely shopping list
- fresh parsley leaves medium chopped shopping list
- sea salt shopping list
- white pepper shopping list
- ground chili powder shopping list
How to make it
- wash zucchini well and slice in half without removing the tops or bottoms
- With a spoon, scoop out the centers but leave at least 1/4 inch of flesh
- Preheat oven to 325F
- Fit Baking sheet with quick-release foil and put in oven while it is heating. This will help your meal roast faster.
- Place squash shells on a platter.
- In a large bowl place meat, crumbs, egg, flesh from zucchini,
- garam masala, diced onion, chopped parsley, roasted shmushed garlic, seasonings.
- Mix gently with your newly washed hands and place in the shells.
- Remove pan from oven (hot!) and place filled stuffed zucchini carefully. Sprinkle with chili powder to your taste.
- Roast until sizzling. There will not be a large amount of fat as buffalo is very lean. Serve with a salad of baby greens.
- Let's eat!

I was privy to the original that you posted: Wow... it sounds complicated, but when you break it down to its individual components, it's not too bad. I had to chuckle at the beets... ;-)
