Hot Chile And Mango Chicken Over Rice

- Boneless skinless chicken breasts (I used 3) shopping list
- 1 jar hot mango chutney shopping list
- 1/2 green bell pepper, chopped (or red, whatever you have) shopping list
- Chopped onion (about 1/2 cup) shopping list
- Dried chile flakes, your choice (I used chipotle and ancho) shopping list
- salt to taste shopping list
- cooked rice shopping list
- Fresh cilantro (optional) shopping list
How to make it
- Slice and chop chicken breasts into bite size pieces
- Add to large saute pan along with chopped onion and bell pepper
- Cook till just done
- Add mango chutney and extra chiles if desired (we like it hot)
- Simmer till bubbly
- Meanwhile cook rice
- Serve over rice with fresh cilantro on top
- Cook time includes rice cooking time, even less if you have left over cooked rice!
