How to make it

  • In large glass bowl,mix vinegar,mustard,garlic,lime juice,lemon juice,brown sugar,salt and pepper. Whisk in olive oil. Place chicken in mixture. Cover and marinate 8 hours or overnight.
  • Preheat outdoor grill for high heat.
  • Lightly oil grill grate. Place chicken on prepared grill and cook 6 to 8 mins. per side,until juices run clear. Discard marinade.

    hi Pat! this sounds so good, do you think I can get away with marinating for a shorter time? say 3 hours?

    Sooooo we're looking at recipes today and my husband sits down at my computer and reads yours. "It'll be salty," he says. I ask him why and he tells me that there are 11 and a half (11/2)teaspoons of salt in the marinade. I had to laugh as this is a man who does not cook except to open up a can of soup once in awhile. I love your recipe and wanted to thank you for posting it. The combination of ingredients looks great and I can't wait to try it all!

    Ok......made this today along with your grilled Asian cabbage (also amazing). When the juices from the cabbage mingled with the chicken there was a major and delightful flavor explosion. (gives me an idea for a combo of the 2 flavors as a marinade). Excellent, excellent flavors-especially together.
