This is a North East meets the South broiled fish. Very quick and easy but tasty and healthy. Other mild white fish can be subbed, but I use cod. This is very good served with, or over, rice, and a green veggie.

Ingredients
  • 3lb fresh cod fillets
  • 1/2 stick butter(less can be used)
  • 2t Dijon mustard
  • juice from 1 large, or 2 small, lemons
  • 2 cloves garlic, minced
  • 1t paprika
  • 1t Old Bay Seasoning
  • 1/2t kosher salt
  • 1/2t fresh ground pepper
  • 1t cayenne
  • 1/4 cup fresh dill, chopped
  • 2 medium-large tomatoes, sliced
  • 1/2 cup fresh Parmesan cheese, grated

Directions
  1. Melt butter and drizzle 1T in broiler safe pan. (I use my cast iron)
  2. Mix remaining butter with lemon juice, Dijon and garlic.
  3. Place fish fillets in pan and drizzle, or brush, with butter mixture.
  4. Combine remaining spice ingredients, other than dill, and sprinkle over fish.
  5. Bake at 450 10-12 minutes until fish is white and just beginning to flake.
  6. Remove from oven, and top each fillet with dill, tomato slices and then sprinkle with Parmesan cheese.
  7. Broil for 5-7 minutes, until cheese is lightly browned, and fish is flaky. Be careful not to over cook!
  8. Add a bit more fresh dill and lemon juice prior to serving, if desired.

This is delicious!! I'm only making it for myself for lunch so I halved the sauce & butter. I also skimmed the directions (surprise, surprise) and added the dill in with the butter mixture. Had only powdered parm, but it's fantastic!! Next time I'll chop the tomato. It was fighting me trying to cut it on top of the fish. Thanks Keni!


And, threw some lemon brocolli in a different pan & roasted it while the fish was cooking. Both are so good & such a quick meal.
