Ingredients

How to make it

  • Melt butter and drizzle 1T in broiler safe pan. (I use my cast iron)
  • Mix remaining butter with lemon juice, Dijon and garlic.
  • Place fish fillets in pan and drizzle, or brush, with butter mixture.
  • Combine remaining spice ingredients, other than dill, and sprinkle over fish.
  • Bake at 450 10-12 minutes until fish is white and just beginning to flake.
  • Remove from oven, and top each fillet with dill, tomato slices and then sprinkle with Parmesan cheese.
  • Broil for 5-7 minutes, until cheese is lightly browned, and fish is flaky. Be careful not to over cook!
  • Add a bit more fresh dill and lemon juice prior to serving, if desired.

    And, threw some lemon brocolli in a different pan & roasted it while the fish was cooking. Both are so good & such a quick meal.

    This is delicious!! I'm only making it for myself for lunch so I halved the sauce & butter. I also skimmed the directions (surprise, surprise) and added the dill in with the butter mixture. Had only powdered parm, but it's fantastic!! Next time I'll chop the tomato. It was fighting me trying to cut it on top of the fish. Thanks Keni!
