- 3lb fresh cod fillets shopping list
- 1/2 stick butter(less can be used) shopping list
- 2t Dijon mustard shopping list
- juice from 1 large, or 2 small, lemons shopping list
- 2 cloves garlic, minced shopping list
- 1t paprika shopping list
- 1t Old Bay Seasoning shopping list
- 1/2t kosher salt shopping list
- 1/2t fresh ground pepper shopping list
- 1t cayenne shopping list
- 1/4 cup fresh dill, chopped shopping list
- 2 medium-large tomatoes, sliced shopping list
- 1/2 cup fresh parmesan cheese, grated shopping list
How to make it
- Melt butter and drizzle 1T in broiler safe pan. (I use my cast iron)
- Mix remaining butter with lemon juice, Dijon and garlic.
- Place fish fillets in pan and drizzle, or brush, with butter mixture.
- Combine remaining spice ingredients, other than dill, and sprinkle over fish.
- Bake at 450 10-12 minutes until fish is white and just beginning to flake.
- Remove from oven, and top each fillet with dill, tomato slices and then sprinkle with Parmesan cheese.
- Broil for 5-7 minutes, until cheese is lightly browned, and fish is flaky. Be careful not to over cook!
- Add a bit more fresh dill and lemon juice prior to serving, if desired.
