Made this for dinner tonight. Went to add the white wine to the sauce, didn't have any? So, I improvised with a bit of vodka and it reduced beautifully and the sauce was wonderful.

Nymomma, you are on a ROLL tonight! I wish I'd been at your place for dinner - these look amazing. We love seafood around here, so this one has been printed off (I just happen to have 4 limes in the fridge, and we're going to Costco tomorrow for shrimp, crab legs and scallops - perfect timing!)...and I always have vodka (or wine) ready!!!

We liked the sauce a lot but there wasn't a lot left after basting the seafood, so I might add a little more "butter" (WHEW) or not reduce it as much as I did. It does need the honey because my limes were near to "going bad" and they gave up a lot of juice and the honey was needed to mellow it out. I hear that alcohol is a flavor transmitter and it certainly tranmitted well last night! The sauce that seeped down to the spinach made it so flavorful. I wish I had some leftover! No one had room for dessert! Thanks for the comments.

WOW ! This sounds "too-die-for" ! We adore scallops and we live on the N.C. coast so seafood is plentiful. I'm going to print this out & try it as soon as I possibly can !

Wow, Tina baby - this looks soooooo delicious and that sauce is to die for. I am printing this out to try before I drink up all my vodka. Heh. Okay, I confess....I know where to get more. But I do have all the ingredients except the seafood and I can get that from Lombardi's.
