Ingredients

How to make it

  • Squeeze spinach dry, reserve.
  • Skewer shimp.
  • Skewer scallops with bacon pieces in between.
  • In a small sauce pan, heat 1 tablespoon of butter, add onion and garlic, saute briefly.
  • Add lime juice, vodka, and honey.
  • Reduce over high heat until syrupy and nearly evaporated.
  • Whisk in 4 tablespoons of butter.
  • Reserve.
  • Quickly heat spinach in remaining butter.
  • Season spinach with some salt/pepper and a scrape of nutmeg.
  • Grill over medium heat the scallops and shrimp basting often with sauce until just done and not dried up or over cooked. About 4 minutes one side, two minutes other side.
  • Put the spinach in the middle of the platter, top with scallops and bacon
  • Serve shrimp alongside.
  • Drizzle any remaining sauce over the top.

    I agree with lovethedepp, can't go wrong with those ingredients. I am just now seeing this because up until recently I didn't think I liked scallops. But I do! I do.

    Well Tina this sounds fantastic sometimes we have to try something new and wait and see what will result. I will have to try this we are big seafood fans and that sauce sounds divine.

    I saw this on your food page and had to come in....and I'm wondering how in the world I missed this.

    Wow, Tina baby - this looks soooooo delicious and that sauce is to die for. I am printing this out to try before I drink up all my vodka. Heh. Okay, I confess....I know where to get more. But I do have all the ingredients except the seafood and I can get that from Lombardi's.

    WOW ! This sounds "too-die-for" ! We adore scallops and we live on the N.C. coast so seafood is plentiful. I'm going to print this out & try it as soon as I possibly can !

    We liked the sauce a lot but there wasn't a lot left after basting the seafood, so I might add a little more "butter" (WHEW) or not reduce it as much as I did. It does need the honey because my limes were near to "going bad" and they gave up a lot of juice and the honey was needed to mellow it out. I hear that alcohol is a flavor transmitter and it certainly tranmitted well last night! The sauce that seeped down to the spinach made it so flavorful. I wish I had some leftover! No one had room for dessert! Thanks for the comments.

    nymomma, you are on a ROLL tonight! I wish I'd been at your place for dinner - these look amazing. We love seafood around here, so this one has been printed off (I just happen to have 4 limes in the fridge, and we're going to Costco tomorrow for shrimp, crab legs and scallops - perfect timing!)...and I always have vodka (or wine) ready!!!
