Raquels Tomatillo Salsa

- 1 1/2 - 2 pounds tomatillos, peeled and rinsed shopping list
- 2-3 cloves garlic, minced shopping list
- 1 teaspoon salt shopping list
- 1 serrano pepper, diced (seeds optional) shopping list
- 3-4 tablespoons cilantro, chopped shopping list
- 1/4 cup diced onion shopping list
How to make it
- Rinse tomatillos, cover with water, bring to boil, reduce heat, simmer uncovered for 10 minutes until tomatillos have changed color
- Drain water. Put tomatillos, salt, garlic and serrano pepper in blender; blend to desired consistency (note: pepper seeds will add heat to salsa)
- Add 1/4 cup diced onion, 3-4 tablespoons chopped cilantro
