Adaptation of my favored meatless rollups, this time with seafood and cheese and green enchilada sauce instead of red sauce.

Ingredients
  • 12 lasagna noodles, par cooked and drained and patted dry
  • 16 oz. baby shrimp, frozen, defrosted patted dry
  • 16 oz of claw meat, don't bother with lump, refrigerator section please
  • 8 oz of cream cheese
  • 8 oz of monterey jack cheese
  • 8 oz of swiss cheese
  • 2 tbsp. of butter
  • 1 small green pepper minced
  • 1 tsp ground oregano
  • 1/2 teaspoon of cumin
  • 1 tsp of seasoning salt (or adobo seasoning my favorite)
  • 1 sm onion minced
  • 2 tsp garlic minced
  • 1 tsp of black pepper
  • Las Palmas Green Enchilada sauce large can
  • 1 cup of grated cheddar cheese
  • Chopped black olives
  • Sour cream, guacamole, salsa as garnish

Directions
  1. Sautee the green pepper and onion and garlic until soft and wilted in some butter.
  2. Mix shrimp, crab,onion, garlic, green pepper, and seasonings, along with all the cheeses. Stir well.
  3. Spread a large spoonful on each lasagna noodle and roll up like a jelly roll.
  4. Place seam side down in a greased lasagna pan.
  5. Cover all rolls with a green enchilada sauce.
  6. Bake in 350 degree oven for 40 minutes.
  7. Pull out of oven and top with 1 cup of grated cheddar cheese.
  8. Put back in oven for 5 minutes more to melt the cheese.
  9. Serve individual rolls,
  10. Top with sour cream, olives, guacamole and salsa.
  11. A green salad with lots of avocado and chopped tomatoes and a citrus vinaigrette works great with this dish.
  12. I would make flan with caramel for dessert.

NYM, you are TORTURING me tonight - I am so hungry, and you combine 2 of my favorite things, lasagna noodles and seafood...it's gonna cool off next weekend - it will be safe to turn the oven on again and bake something wonderful - like this!

Alterations


Okay, crabmeat was way out of my budget today, so I used "faux" crab flakes (16 oz.) and I didn't have cheddar to top the casserole, but I used a combination of provolone, muenster, monterey jack to top the Los Palmas Green Enchilada sauce. We topped the rolls with a spoonful of salsa for plating and I forgot to chop the black olives. NO worries, it came out great and it was budget friendly. (tried whole wheat lasagna noodles and they were credible, no off putting taste, I liked them)


How about stuffing the mixture into flour tortillas instead of pasta? Liked baked enchiladas. I'll try it.
