I saw this Puck's recipe and just had to share with everyone. I love avacados and this sounded and looked so yummy! Made it for lunch and is good by itself with rye bread.

Ingredients
  • For the salad:
  • 2 small to medium heads Boston lettuce, discard any wilted leaves
  • 1 Hass avocado, pitted
  • 1 large bunch scallions, thinly sliced
  • Leaves from 1 bunch cilantro, finely chopped
  • For the dressing:
  • 2 limes, juiced
  • 1/3 cup extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • About 20 grinds fresh black pepper
  • 1 tablespoon whole-grain mustard

Directions
  1. Pull the lettuce leaves from the head, rinse gently under cold water, and lay out on clean towels to dry. Use a spoon to remove the flesh in 1 piece from each half of the avocado. Thinly slice the avocado flesh into thin wedges.
  2. Whisk together all the dressing ingredients.
  3. Arrange the lettuce leaves on a plate and top with the avocado wedges, scallion, and cilantro. Finish with a healthy drizzling of the dressing.

I have to try this... I get the best avacados in Mexico you have ever eaten... and always ripe.. Plus limes are still in season here... Great post.. something diffrent!

Had to tell you I made this for dinner tonight and man-oh-man was it tasty. I just knew by the ingredients that my DH and I would love it. I served it with shrimp and grits and they really complimented one another.

This is a perfect recipe for sure = everything that I like is inside. What do you think though would happen if I used cabbage instead of lettuce? also in the picture I was thinking there was going to be artichokes somewhere in this recipe. Don't you think that sounds good?

Hi Mystic....I am new here but I think after I try Don's chili I will definitely try this avocado recipe. My father in-law used to make something like this called Palta. It basically has the same ingredients except for the sugar & the mustard. He was from Santiago, Chile. Will let you know how it turned out. Thank You!!!
