Ingredients
  • 3 cups oats (quick cooking works best)
  • pinch to 1/8 tsp of salt to taste in each bag
  • 8 small zip-like baggies

Directions
  1. Process ½ cup oats in a blender (or 1 cup oats in a food processor) on high until powdery.
  2. Set aside.
  3. Repeat with additional ½ cup oats if using blender.
  4. Put the following into each baggie: 1/4 cup regular oats, 2 tablespoons powdered oats, and 1/8 teaspoon salt.
  5. Store the rest in an airtight container.
  6. To serve, empty packet into a bowl. Add 3/4 cup boiling water. Stir and let stand for 2 minutes. Adjust water amount for thicker or thinner oatmeal.
  7. Try some of the following variations:
  8. Sweetened Oatmeal: Add 1 T. sugar
  9. Brown Sugar/Cinnamon Oatmeal: Add 1 T. brown sugar and 1/4 t. cinnamon
  10. Raisins and Brown Sugar: Add 1 T. packed brown sugar and 1 T. raisins
  11. Apple-Cinnamon Oatmeal: Add 1 T. sugar, 1/4 t. cinnamon, & 2 T chopped dried apples
  12. Fruit and Cream Oatmeal: Add 1 T. non-dairy coffee creamer and 2 T. dried fruit
  13. Health Nut Oatmeal: Add 2 T. any kind of wheat germ

I usually cook oatmeal for my 17 yr. old in the mornings before school (so important to have wholesome brain food for a long school day). I do keep those Quaker Instant Oatmeal Packets on hand for when I don't have time, but now I will make these ahead of time and keep them on hand instead. I'll throw cinnamon & brown sugar in ahead of time. This is also so much better because it's all natural.

I've heard of doing this before but I'd never tried it. I just got in a large package of 1 minute oats to make the raspberry oatmeal roll recipe, so I can experiment.

I made a bunch of these for my boyfriend and his son a while back and they were a huge hit. The best part is being able to really customize the flavors, without the way-too-much sugar the commercial ones have. Don't forget about vanilla powder! It's a great addition to most flavors and really makes it taste rich and yummy!

Bravo! Like a lot of people, I buy those stupid instant oatmeal packets for the office. No more! Occasionally my cooking friends and I get into a "how instant do things have to be" discussion, and the topic of instant oatmeal always comes up. I can't wait to spring this recipe on them.
