Mississippi Tomato Sandwich Recipe
This is a once a day meal at our home in the summer when the tomatoes are coming in.

Ingredients
  • 2 Slices Whole Wheat or White Bread
  • 2 Tablespoons Mayonnaise
  • 1/2 Large Peeled Vine Riped Home Grown Mississippi Tomato
  • Salt & Pepper to taste

Directions
  1. Apply mayo to both slices of bread.
  2. Stack tomato slices on bread. ( As many as you can get on the bread)
  3. Salt and pepper to taste.
  4. Then have a contest to see who can lick the juice off their elbows.

I'm with you on this one! After I've had my quota of bacon, I then proceed to tomato sandwiches. Love them, especially when the vine ripened tomatoes are straight from the garden.

Delicious! Plain and simple. Mayonnaise and tomatoes and black pepper...absolutely the best sandwich!

I LOVE tomato sandwiches - definitely a frequent meal during the summer with some nice big beefsteak tomatoes. Mmmm. And lucky for me, during my pregnancies with my kids, I had cravings for tomatoes during the summer. Sometimes I'd add a slice of cheese to the sandwich - and I usually lightly toast the bread.


The ultimate of culinary creations....the only thing is it has to be Duke's Mayo.

Some of my friends look at me like I am crazy when they see me eating these... wonderful!
To take it up a notch.. add thin sliced cucumbers! Then they really look!


If winter doesn't end soon I think I'm gonna cry. I'd trade my new Calphalon cookware for one fresh home-grown tomato right now...Usually the tomatoes never make it off the cutting board. I just slice, salt and slurp them down over the sink. Maybe I should try a little more civility...


I can't wait for summer! Nothing better than a nice ripe, fresh from the garden tomato. I usually can't get them into a sandwich either, I've got them gone before anyone can get any.


There ain't nothin' like a good homegrown tomato on some bread with lots of mayo and some pepper. Ya gotta mash it down real good and eat up! I ate these ALL the time when I was pregnant. You'd think my daughter would like tomatoes but she doesn't! Jett
