Slo-cooker Mock Chicken Chow Mein Recipe
This is from a 5-ingredient slo-cooker cookbook. I added stuff to it. More veggies! Serve this over rice or chow mein noodles, or both.

Ingredients
  • 1 lb boneless, skinless chicken breasts, or thighs, cubed
  • 2 cups diced celery
  • 1 cup diced onion
  • 2 T soy sauce
  • 2 cups water
  • 1/2 t salt, optional
  • 1/2 t pepper, optional
  • 1 T cornstarch
  • 1/4 cup water
  • 1 can bean sprouts-drained
  • 1 can sliced water chestnuts-drained

Directions
  1. Place chicken in 4 qt. slow cooker. Add celery, onion, soy sauce, 2 cups water, salt and pepper.
  2. Cover and cook on High 4 hours.
  3. Mix cornstarch with 1/4 cup water in a small bowl. When smooth, add to slow cooker to thicken the sauce a bit.
  4. This is where I added bean sprouts and water chestnuts. Turn down to low and let it heat up.
  5. I like to serve this on a bed of rice and sprinkle the chow mein noodles on top for crunch.

I used to love the Chicken Chow Mein served in old-fashioned Chinese-American restaurants as a kid growing up in the late sixties and early seventies.
The aroma in those restaurants as you walked into those eateries, as well as the taste of the food, is something that no longer exists today.
This Chow Mein recipe definitely looks worthwhile trying out, however, since I don't own a slow-cooker, how would I prepare this recipe on the stove-top?


Adding this to my to do list this week!! It looks so good I probably wont use my slow cooker. Although that might sacrifice flavor until the next day(if it lasts!) Awesome post for this house.

Very simple, but omg so good


Firstly, this is not really chicken chow mein. sounds tasty, but just to throw it out there. whatever mein you like, it has noodles. but anyways, you didnt give info on cooking/crisping noodles. Also, slow cooking is kind of the opposite of how traditional chow mein is made. Really its all about a very fast high sear type of cooking. So while this may taste great, if you tell friends you're serving chow mein they may look at you funny when you serve it. Not really criticizing anything but the title of the dish.
