Ingredients
  • 8 Chicken Breast (pounded flat)
  • 8 strips of bacon (to wrap around the chicken or to cook crumble and Sprinkle onto the cream cheese before rolling up)
  • 8 Large Fresh spinach leaves
  • 2 cups Corn Flakes (crushed)
  • 1 Pkg Garden Vegetable style Cream Cheese (softened)
  • 2 tblsp Olive Oil
  • 1/2 tsp Cayenne
  • 1 tsp Salt
  • 1 tsp Garlic (minced)

Directions
  1. On wax paper, lay out your flattened chicken breast, pat dry with paper towel.
  2. In a bowl, mix Garlic, Cayenne, Salt and Cream Cheese. Spread mixture onto dried chicken breasts.
  3. Lay one fresh spinach leaf on top of cream cheese.
  4. You have a choice, you can either crumble already cooked bacon onto the cream cheese at this point, or wait and use uncooked bacon to wrap around the chicken once it is rolled up, it is your choice, both ways are wonderful.)
  5. Tightly roll chicken and secure with toothpick.
  6. Rub outside of chicken with olive oil until covered (Only use the olive oil if you are crumbling your bacon inside the rolled up chicken), then roll in crushed corn flakes.
  7. Place these in a rectangular corning or glass dish and cover with parchment paper, (It is a good idea to line your pan with parchment as well).
  8. Cook in microwave for 10 minutes at 70%. Depending on your microwave, it may be necessary to cook a minute or two longer.
  9. My kids can make this for their friends, when they want to be Fancy Pants!

Oh No!! I forgot to put on the bacon...again! Thanks for pointing that out, I will go right away and edit! I am back, is there not a place to edit? well, anyways, you need to wrap the bacon around the chicken before rolling it in the crushed corn flakes.

Interesting recipe and the speed of nuking it is a sure plus. I have to admit I'd not have even read this one with the name given as I rarely make pork and was so surprised to discover it's really a stuffed chicken recipe. It looks like it must be colorful and moist when cut into. I'll get to this one without the bacon one day.

We had these for dinner tonight, what a hit!
Everybody loved them... except my sis who hates spinach and since I used the frozen spinach there was probably too much on each "porky" so next time ill make sure i put less or get the fresh leaves.

My mom gave it a straight 5
My dad gave it a 4.9 because there was not enough!
My friend gave it a 4 because i left the toothpicks in! o_O?! lazy...
My sis gave it a 2 because it had too much spinach, but she ate her 2 so I think she exaggerated ;)
So I gave it 5 forks ;)

Oh, we didn't use any bacon since in Italy there is no Turkey bacon and i don't eat pork.
I uploaded a pic, hope you don't mind, change it anytime you want ;)


My variations were:

1/2 chicken breast cut into 10 slices - mom's a genius with slicing meat :p

So we had 10 porkies instead of 8 ^_^

Frozen spinach instead of fresh - 1 little block per porky will do and even less

I used 1 clove of garlic, minced

Used plain Italian Philadelphia cheese, would be better with a flavored cream cheese, will try chives next time ;) ah, please put the weight or size of package of cheese you use, ours might be different size to yours ;) I guessed.

The rest was the same!

I think if you are using the frozen spinach perhaps mixing it in the cream cheese would be better, else it stands out a lot in flavor, mixing it in the cheese it will get the garlicky cheesy-ness ^_^


I just added the pic of the one I did last night without spinach, but with turkey bacon. It was fantastic!

I am actually afraid of microwaves myself and never use them, I can make this a different way though, great recipe it's reminding me of a Cor don blue type recipe I make myself with goat cheese and prosciutto, so it will be a new spin with the spinach idea, I like that.


I'm with OM in that I'm not fond of microwaving, except for leftovers. I've had bad luck with meat, turning it into shoe leather or rubber. Maybe with the newer sensor one, I might have done better, but it died a few weeks ago, and isn't getting resurrected very quickly ("Oh, Hubby dearest, my 'wave is still dead...and I despise melting butter in the oven...". I cannot tell a lie...I didn't really say it quite that way...)

Microwaves aside, you've posted a recipe with a lot of my fave ingredients! A person couldn't go wrong with bacon, cream cheese, garlic & spinach--unless they added chocolate. Sounds delish!

I can't wait to try this dish, it sounds so yummy, the ingredients in the recipe yell out to me this should be rated a 5, LOL. I'll fix it and have my daughter over, we make something like this but use ham slices and we don't use spinach or cayenne so it is different enough to us to be a totally different recipe. Nor do we use the flakes for coating, I am getting hungry thinking of eating it. Thanks so much for sharing.
