Optional addition 1: 1 cup of Macadamia Nuts, coarsely chopped ~ This will really take you to the tropics ~ Hawaii!
Optional addition 2: 1 cup of coconut stirred in to batter, and reserve a little extra to sprinkle on top. If using fresh coconut add a little fine sugar mixed into the topping coconut. I've done this and it's so yummy. I love fresh coconut.

This sounds like a fun twist with the banana and pinepapple. I have to admit I am not generally happy with baked goods with oil and so I just melt butter and substitute for the buttery flavor I seem to crave.
I am going to get to this one when I start baking again.

I didn't even read the recipe, I don't care. I love pineapple, banana, and bread (well you know what I mean). I am making this recipe for an outdoor function that I am doing for about 200 people on Sunday. Forget the coconut- you and me and very few love it so I'll skip it. I love this recipe.

I'm back to tell you I made this, and I've gotten rave reviews at just how moist and scrumptous it is! I used your base recipe, without any alterations and a dusting of confectioners sugar after the bread was cooled. I will be making this again for sure, keeping in mind your other wonderful alterations. I also added a pic, and will be adding my review on the 'I Made It' group. Thanks again Dee! :)

Hey Dee, I have made this several times now (even the coconut variation), and my friends continue to rave about it, and keep asking me to make more! This is one of the best banana breads I have had! Next time I plan to add some slivered almonds in addition to the coconut :) Thanks again dear!
