You know sometimes my mom would make the fried rice with the Spanish chorizo, specifically Chorizo de Bilbao, which is available in big cans in some Filipino markets. I don't always see them much. I remember when my mom would make them, she would chop up and cook the chorizo first till it was crisp, so that all of the oil would come out, then she would put some garlic in the fat, throw the rice in and then add the veggies and egg. It was so good, spicy and oily. I don't pork any more, but I still remember this fondly. Chorizo de Bilbao is not too red like other Spanish chorizo and it is not sweet like Filipino longaniza.
