Ingredients
  • 1 lb flank steak
  • 1 T sugar
  • 6 T soy sauce
  • 1 finger ginger (about the size of a thumb) pounded to release flavor
  • 1 clove garlic crushed
  • 1 T Sriracha Hot chili sauce (found in Asian markets)
  • 1 t chili flakes

Directions
  1. Pound steak on both sided with mallet and cut into 1/2 inch strips
  2. Combine marinade ingredients and marinate beef strips overnight. Place beef on rack in shallow roasting pan and bake at 150 degrees to dry about 4 hours. The timing is dependent on the thickness of your beef slices. You want to be able to bend it slightly and easily. You can actually use any type of inexpensive beef. I always make LARGE batches of this since the family can't get enough of it. So that being said....mix the ingredients to your taste. Play with it and have fun in the process!!

I actually have a smoker, I mostly smoke salmon but this is something my husband would love to take to work with him, I've printed it out.

Thanks Invisiblechef!! In Hawaii we had drying boxes. wood framed and enclosed with a wire mesh you would pick up at a home improvement store. This would keep flies and other bugs out. You would place the beef in the dry box and hang outside in the great warm weather. Of course this process took days but mmmmmm, I can taste it now

Finally, a picture to go with the recipe!!!! My family likes the jerky on the thick side so it is full of flavor and chewy. Of course if you're going to make this much you will have to increase the ingredients. Me???? I just pour and add the ingredients to taste so I suggest you do the same. Make sure you marinade at least for 2 days in the fridge turning every half day. This way all the beef gets a good soak!!!
