How to make it

  • Rinse rice in several changes of cold water until water runs clear. Drain well in a sieve.
  • Bring rice, broth, cinnamon stick, and bay leaves to a boil in a 4-quart heavy pot over high heat. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 15 minutes.
  • Remove from heat and let stand, covered and undisturbed, 5 minutes. Discard bay leaves, then stir in butter until melted. Fluff gently with a fork.
  • *Note: Rice can be made 1 day ahead and cooled completely, uncovered, then chilled in an airtight container.
  • Reheat rice, its surface covered with a dampened paper towel, in a colander set over a saucepan of boiling water, covered, 5 to 10 minutes.

I did it but replaced the spices with grounded bay leaves and cinnamon to be more colorful. Had it with tilapia and sauted black beans and green peppers. It was simply amazing. You have my 5. Will definately make it again.

This is great. I add some butter, sliced onion, cloves, cardamon and turmeric first to the pan-coat the rice in it and add the hot stock-tasty also. :D

Thanks Vickie! Love that basmati rice. The flavors in this I'm sure paired well with lamb. I'll have to go back and read that stew recipe. Was that one Jim's? How did it turn out?
I made his Chicken with Sumac and it was awesome.
    You have my 5 .

That sounds yummy! Basmati is my favorite kind of rice; I won't use any other kind. I like to make it the Iranian way with the tadeek (or crust) on the bottom. It's delish! :)
