Peas are delightful in salads. In this pea salad recipe, mild English peas get a flavor boost from salty Spanish peanuts. A "not so" Traditional side that your guests and family will love.

I realized when I was leaving a comment on your home page and saw this picture, that I never commented after I made this a few months ago...it was FABulous! The peanuts were such a "fun" addition, and unexpected by those who ate it, but LOVED by everyone...this one is in the "permanent" file. I'll be making this a lot as (or I should say IF) the weather warms up around here...great summer salad, but good any time of the year!

I made this a few days ago... Ate it all by myself. ::She laughs::
I did not share it with anyone, this was the only thing I ate all day, besides some sliced jalapenos on the side. Also, I did not add the peanuts, and put a bit more sour cream and a little less mayonnaise..
Loved it!~!!
Be well,
Annie
p.s. I wish I had another bag of peas in my freezer. I would make some right now to nosh on..
